After being behind the stick and managing beverage programs in NYC, she became a member of the esteemed Diageo Masters of Whisky program and started earning several spirits certifications. She led the team hosting ambassador internships at The George Dickel Distillery and developed a 6-month mentorship to prepare ambassadors for the revered IBD General Certificate of Distillation. She went on to become the U.S. National Ambassador of Lot No. 40 for Corby Spirits and Wine, where she eventually took the role of Trade and Education Manager, leading the trade and educational programming globally and developing all trade and sales assets for the Canadian Whisky brands. Gina spearheaded the creation of the first-ever certification in Canadian whisky, providing a deep-dive on the category. Her newest endeavor, DandelionBevEd, now leads production and business development of the four-week course independently, as well as with partners such as WSET, Lush Life Productions, and Bourbon Women. She is the founder of this new agency, creating custom educational programming and engagement pieces for suppliers, distributors, enthusiasts and consumers, as well as being an Educator for the Edinburgh Whisky Academy. Gina is also a co-founder ofSip.Central, bringing efficiencies to the field for beverage brands and distributors by creating a custom digital hub that houses all sales tools, industry data, the product ordering system, interactive training programs, engaging incentive programs and more!
Dave Mitton Global Brand Ambassador For the last decade, Dave has travelled the world as the Global Ambassador for Lot No.40 and J.P.Wiser’s whiskies. As Head of Education and Advocacy for the brands, he has a great passion when it comes to enlightening the bartender community about the history, production and of course the creation of cocktails with his country’s national spirit. Previously he was the owner and operator of several well-known restaurants and bars in Toronto as well as the inaugural President of The Canadian Professional Bartenders Association, Ontario Chapter. He has always had a great devotion for community and security amongst bartenders. Dave is a big believer in training and providing staff with the knowledge and tools they need when it comes to making great drinks and everything else that comes with working behind the bar. Additionally, he loves gathering stories from those on the front lines and his unyielding curiosity continues to drive him across the globe, seeking new cocktail adventures and connecting with the fascinating individuals behind them.

Amy Levesque Director of Distilling and Master Distiller, Hiram Walker & Sons Distillery @cdnwhiskydistiller
Amy started her career in the Petrochemical Industry and obtained her diploma for Chemical Production and Power Engineering, as well as an Operating Engineer certification. Always wanting something a little more fun and challenging, she moved over to the Spirit Distillation industry and joined Hiram Walker & Sons. Amy started as a distillery operator, and advanced her career from Supervisor to Manager, to Director of Distilling. She has been with Hiram Walker for over 10 years and absolutely loves her job! Recently she completed her Master of Science degree in Brewing and Distilling from Heriot Watt University. Never stop learning! Through her career, she’s been fortunate enough to create, develop, and improve many different spirits from whisky to rum to gin to vodka. Canadian Whisky is where her heart is, although rum has a big place there as well! She’s also spearheaded the commissioning of new boilers, evaporators, mechanical vapour recompression systems and various other equipment. Column optimization and design are real points of interest for Amy.
Dr. Don Livermore Master Blender, Hiram Walker & Sons Distillery @cdnwhiskydoc
Dr. Don Livermore is the Master Blender of Hiram Walker & Sons Limited in Windsor, Ontario, Canada. He is responsible for some of Canada’s award-winning whiskies such as JP Wiser’s, Lot 40, and Pike Creek. After graduation in 1996 from the University of Waterloo with a degree in microbiology, Don started his career at the distillery as a lab technician. At that time Don pioneered the development of NIR for fermentation analysis. This transformed how the distilling industry monitored fermentations and has spoken around the world on this topic. Don furthered his education by completing a MSc and PhD in Brewing in Distilling at Heriot Watt University with a focus on how wood interacts with whisky. In 2012, he became the Master Blender of Hiram Walker Distillery and in 2019 and in 2020 he won the Canadian Whisky Master Blender of the Year at the Canadian Whisky Awards. Today, Don is a sought-after speaker on Canadian Whisky as he brings together all facets of distillery operations and maturation processes and how flavours are developed in whisky. He created the Canadian Whisky Flavour Wheel© which is a unique perspective on blending whisky. Always an educator and industry expert, Don published two books in 2022; The Canadian Whisky Master Class Volume 1 – The Keeper of History and The Canadian Whisky Master Class Volume 2 - Blending 101.
