Meet the Experts Behind the Experience

Tess Aldredge | Senior Manager, Sensory Research & Process Development – Global Research & Development, Suntory Global Spirits

Tess leads a dynamic team of sensory scientists and process engineers dedicated to supporting global product innovations within Suntory Global Spirits. Her team conducts research on distilled spirits, flavored spirits, and ready-to-drink beverages, ensuring that we consistently delight consumers around the world.

With nearly 19 years of experience in sensory testing, Tess has evaluated thousands of products. Since joining the Global R&D Team at Suntory Global Spirits (SGS) six years ago, she has played a pivotal role in the flavor development guidance of -196TM (minus one-nine-six) Vodka Seltzers in North America, Nectar Collective Premium Sparkling Cocktails, and Jim Beam® Ready-to-Drink (RTD) products in the US and Germany. Her foundational research has advanced the understanding of flavor development in Bourbon at SGS, and she actively trains employees on best tasting practices and sensory perception.

Tess holds a Master of Science in Food Science and dual Bachelor of Science degrees in Food Science and Nutritional Sciences from Texas A&M University. She currently serves as the Chair of the ASTM Committee E18 Sensory Evaluation, which unites sensory experts to develop and refine best practice standards.

In her free time, Tess enjoys traveling, hiking, nurturing her collection of houseplants, quilting, and embracing new adventures—especially those involving whiskey or food. Although she resides in Kentucky, she proudly calls Texas home and welcomes conversations about breakfast tacos or the Texas A&M Aggies!

 

April Elston Ph.D. | Senior Manager, Whiskey Research & Innovation – James B. Beam Distilling Co.

April is the Senior Manager of the Whiskey Research & Innovation Team at James B. Beam Distilling Co., (JBBDCo.) where she oversees research and innovation initiatives. Leading a talented team of scientists, she focuses on commercializing exceptional spirits and developing new experimental mashbills. April collaborates closely with the JBBDCo. operations team to execute a comprehensive research agenda aimed at enhancing product quality.
 
Joining Jim Beam in 2005 after completing her graduate studies, April began her career in a hybrid role within research and development, working in both the analytical lab and product development sectors. As the company expanded, so did her expertise across various spirit categories. Over her first 17 years, she successfully launched more than 35 products globally. In 2022, she transitioned to her current role while commissioning the new Fred B. Noe Craft Distillery.
 
April holds a B.S. in Chemistry from Florida Southern College, a Ph.D. in Food Science from the University of Florida, a Postgraduate Diploma in Brewing and Distilling from Heriot-Watt University, and a Distilled Spirits Business Certificate from the University of Louisville. She is actively involved in her company's LGBTQ+ initiatives and serves on the board of Civitas, Louisville’s LGBTQ Chamber of Commerce, where Suntory Global Spirits is a corporate sponsor. Additionally, she is a member of the Technical Committee for the American Malting Barley Association.
 
Residing with her wife, April, (yes they both share the same name, which gets only a little confusing) and their two daughters, Porter (10) and Dessie (7), April enjoys running and spending quality time with family and friends at festivals, hiking, and engaging in outdoor activities. Originally from Florida, she cherishes opportunities to return home, reconnect with her family, and enjoy time on the water.
